Rainbow Chard Salad with Walnuts and Haloumi

 

Salad

1/2 bunch rainbow chard finely shredded

2-3 medium apples diced

Lemon juice

One block of haloumi diced

1 bunch mint - chopped

1 cup walnuts

 

Dressing

80ml olive oil

60 ml balsamic vinegar

1 generous teaspoon Dijon (or preferred) mustard

 

 

Pan fry the diced haloumi in olive oil until browned slightly and put aside to cool.

In a large bowl, combine the chard and mint.

Toss the diced apple in lemon juice and add to the greens.

Add the cooled haloumi and walnuts and toss.

 

Add all dressing ingredients to a jar and shake to combine. 

Drizzle over salad when served.

 

Serves about 6 people as a side dish
